Serving Up Summer Glam

gazpachoManaged to steal a summer evening at  a friends home last weekend and was served up a gorgeous gazpacho. It was so gorgeous, all I could think was: ‘Bond. James Bond….if he was vegan’. Honestly, that is what I thought.

The hostess generously shared the recipe, which she got from her hairdresser, Chrystal. (No relation to Chrystal Galore).

Beautiful, simple, and…well…kind of sexy.


Puree together:

4 roasted red peppers (homemade or from a jar)
6 large tomatoes quartered
1/3 cup olive oil
2 T balsamic vinegar
2 cloves garlic
1 tsp smoked paprika

sea salt and freshly ground pepper to taste

Chop small and mix together:

1 orange (red, green or yellow) pepper
1 small red onion
1 English cucumber
Cilantro to taste

Pour puree into large martini glasses leaving lots of room for the chopped veggies. Place veggies on top of puree.

Top with sliced avocado.
