Chicken & Quinoa Soup: A Divine Combination

Chicken Quinoa SoupThis recipe comes to the Kitchen from Patty Bojczuk of Rethinking Your Life. She calls it Chicken Quinoa Soup Divine, which is fitting, as she herself is a pretty divine human being. She’s also an expert at divining the inner meaning and motivation behind common human behaviour, which makes her kind of a handy person to know. Especially if you are interested in matters metaphysical. And who isn’t?

Plus, she makes a heavenly chicken soup. 

 

 Ingredients for broth:

1 lb of chicken backs and necks
3 bay leaves
3 whole star anise seeds
1 large sprig fresh rosemary chopped
8 cups water

Directions for making broth:

Put everything into a large pot and bring to a full boil,then turn down to medium heat and boil for 2 hours. Strain the broth into a large bowl and then put the broth only, back into the large pot.

 Ingredients for soup:

2 boneless chicken breasts cut into bite-size pieces
2 stalks celery chopped
1 large onion chopped
4 cloves garlic chopped
2 cups of carrots cut into bite-size pieces
2 cups cooked quinoa
Sea salt and pepper to taste

 Directions to make the finished soup:

Place all the soup ingredients into the chicken broth in the large pot and bring to a medium heat and cook for1 hour or until chicken and veggies are tender.

Serve with fresh chopped chives sprinkled on top  – and a chive flower too if possible :

 Makes 6-8 large bowl servings
